Bacon-Fried Dove Breasts

This is a wonderful way to cook dove breasts. You can debone the breasts if you like, but I don’t. I’ve also found that thicker sliced bacon is better to use than thinly sliced bacon. I use regular flavored bacon, but you might like to use black pepper bacon, apple-smoked bacon, or maple bacon.

Ingredients:

  • 6 dove breasts
  • Garlic salt
  • Onion powder
  • Black pepper
  • Cayenne
  • 6 bacon slices
  • Oil

Directions: Rinse doves and pat dry. Sprinkle breasts with dry spices and rub seasonings into flesh. Wrap each breast with bacon and secure with a toothpick.

Fill a heavy skillet with ½ – 2/3 inch of oil. Heat over medium heat. When oil is hot, carefully place doves in pan. Fry both sides until bacon is crisp and meat reaches desired doneness. Drain on wire racks or paper towels.
